Strawberry Syrup- perfect for topping pancakes, waffles, or even ice cream!
I needed a couple of quick thank you gifts a few weeks ago. I also happened to have a few pints of strawberries in my refrigerator that needed to be used up. I was short on time, so I decided to kill two birds with one stone. I whipped up a batch of strawberry syrup, poured it into mason jars, and embellished the jars with supplies from my craft room.
I had never made strawberry syrup before, but man was it yummy. And much easier than I thought it would be. I think it would be even easier with frozen berries, because they are already soft. I will definitely be making this again! After giving it away, we only had enough for one breakfast of German Pancakes. They were fabulous! I think this would also be yummy over ice cream. Give it a try and let me know what you think.
Didn’t my little gifts turn out cute?

Strawberry Syrup
1 pint berries, pureed in food processor
3/4 cup sugar
2 Tbsp corn syrup
1 1/2 tsp lemon juice
1/2 tsp butter
Pinch of salt
1/4 tsp almond extract (optional)
If desired, strain berries through a wire strainer to remove some of the seeds. Combine all ingredients in a saucepan and bring to a boil, stirring constantly. Boil for 1 minute. Serve over pancakes, waffles, or ice cream. Yummy!
