I look forward to strawberry season every year. Not only can I eat fresh berries by the dozens, I love using them in recipes.
After making a strawberry lemon ice cream cake last summer, I couldn’t wait to try out similar dessert recipes. The combination of strawberries and tangy lemon screams warm weather, doesn’t it?
For an extra refreshing treat, serve these strawberry lemon brownies with a scoop of strawberry ice cream or sherbet.
How To Make Strawberry Lemon Blondies
- PREP – Spray a 9×13″ baking dish with cooking spray. Preheat your oven to 350 degrees. Dice the strawberries.
- WET INGREDIENTS – Melt the butter in a large glass bowl. Whisk in the sugar, then the eggs, lemon zest, and juice.
- DRY INGREDIENTS – In a small bowl, whisk together the flour, cornstarch, baking powder, and salt.
- COMBINE – Add the flour mixture to the wet ingredients. Stir gently with a rubber spatula until barely blended. Gently fold in the strawberry chunks.
- BAKE – Spread batter into the prepared pan. Bake in a preheated oven at 350° for 35-40 minutes, or until top is lightly browned and a toothpick inserted in the middle comes out clean.
- GLAZE – Finely mash or puree a large strawberry. Measure a tablespoon of puree and combine it with the powdered sugar, zest, salt, and enough lemon juice to make a thin glaze. Spread over the warm bars.
- COOL – You can serve the bars warm, but they slice much easier when they are completely cool.
Store leftover blondies in an airtight container for 4-5 days at room temperature.
You can also freeze them for 3-4 months. For maximum freshness, I like to wrap them individually in plastic wrap, then place them in a heavy-duty ziplock bag.
PRO TIPS:
- For the best results, you must use fresh lemons. Dried lemon zest and bottled lemon juice just don’t have the same flavor.
- If you use unsalted butter, add an additional 1/4-1/2 teaspoon of salt.
- The strawberries release juice after baking, so make sure they are thoroughly baked or they can get soggy.
LEMON STRAWBERRY BLONDIE RECIPE VARIATIONS:
- These bars are also tasty with a cup of white chocolate chips added to the batter.
- For an even more powerful punch of lemon flavor, you can add additional lemon zest or lemon extract.
- Try them with orange zest instead of lemon, and try different berries. I think blueberry orange or lemon would be fantastic!

Strawberry Lemon Blondies
No one can resist these easy strawberry blondies with a tangy burst of lemon flavor! The pretty pink glaze tastes as good as it looks!
Ingredients
- 1 cup salted butter
- 1 cup granulated sugar
- 1/4 cup light brown sugar
- 2 large eggs
- 2 Tbsp fresh lemon juice
- 1 Tbsp lemon zest
- 2 1/2 cups all purpose flour
- 2 tsp cornstarch
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/4 cups diced fresh strawberries
Glaze Ingredients:
- 1 cup powdered sugar
- 1/2 tsp lemon zest
- dash salt
- 1 Tbsp strawberry puree
- 1 Tbsp fresh lemon juice (more or less)
Instructions
- Spray a 9x13" baking dish with cooking spray. Preheat your oven to 350 degrees.
- Wash and hull the strawberries. Dice and set aside.
- Melt butter in a large bowl. Whisk in the sugars. Add the eggs, lemon juice, and zest and whisk again.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt. Add to the wet ingredients and stir a few times.
- Gently fold the diced strawberries.
- Spread the dough evenly into the prepared baking pan. Bake at 350° for 35-40 minutes, or until light golden brown on top.
- For the glaze, finely smash a large strawberry and measure a tablespoon of puree. Whisk together the powdered sugar, zest, salt, puree, and enough lemon juice to make a thin glaze.
- Pour the glaze over the warm bars and spread out evenly.
- Let the bars cool completely before cutting into squares.
Notes
The strawberries release moisture as the bars sit, so don't underbake them, or they will get soggy.
