The boys may be back in school, but we are still enjoying summer weather around here. I use the term “enjoying” pretty loosely. When it’s 98 degrees outside, I like to enjoy my time inside in the air conditioning. 😉 Is it still hot where you are? If so, you should make this refreshing Lime Watermelon Slushie before all the watermelons are gone. It is just perfect for a hot summer afternoon.
I first tried one of these slushies a few years ago at a friends house. She didn’t have a recipe, she just threw stuff in the blender. I put together a recipe, but it isn’t rocket science or anything. You can add more or less of any of the ingredients to your liking. Oh, and by the way, don’t you just love seedless watermelon? So great not having to worry about the dang seeds anymore. Awesome invention! OK, maybe it’s not exactly an invention, but you know what I mean.
Lime Watermelon Slushie
6 cups seedless watermelon
1/4 cup frozen limeade concentrate
2 Tbsp sugar
2 cups ice
Put watermelon in the blender and blend till smooth. Add limeade and sugar, then ice. Blend till ice is crushed. Serve immediately–it gets a kind of funky texture if it melts.
