Hearty Stew Packed with Flavor!
I did not grow up eating lentils, and I’m ashamed to admit I always thought they sounded yucky. So I never tried any recipes that called for lentils.
The first time I tried them was when my mom made a pot of this sausage lentil stew for a family get together. I’m so glad she brought it because man was I wrong about lentils!!
I loved it. So did my whole family. The sausage gives it great flavor. So if you’ve been a little wary of lentils like I was, this might be a good lentils recipe to start with.
Serve it hot with some crusty bread or a simple salad for a complete meal. It’s the perfect dinner for chilly days!
Do I need to soak lentils for stew?
You do not need to soak the lentils for this stew recipe, simply rinse them. They will simmer in the broth, which gives them more flavor than just soaking in water.
HOW TO MAKE SAUSAGE LENTIL STEW
- SAUSAGE – Brown the sausage in a dutch oven or large soup pot. I like to break it into smaller pieces with this meat chopper. Drain off any extra fat.
- VEGGIES – Dice the onion, and green and red peppers. Add to the pot and saute for 2-3 minutes over medium heat.
- LENTILS – Add the garlic, cumin, sugar, salt, pepper, tomato sauce, lentils, and broth. Boil, then simmer for 10 minutes.
- POTATOES – While the lentils cook, peel and dice the potatoes. Stir them into the stew and cook, uncovered, for an additional 20 minutes, or until both the potatoes and lentils are tender. Reduce the heat if the stew starts to splatter.
Ladle into bowls and serve hot. You can garnish with fresh parsley or cilantro if desired.
Store leftovers in the refrigerator in an airtight container for 4-5 days. We like it even better the next day!
LENTIL SAUSAGE STEW VARIATIONS:
- Instead of pork sausage, you can use spicy Italian sausage, link sausage, or even turkey sausage.
- Sliced carrots are a great addition, but you could also try adding celery, green beans, or fresh spinach.
- Beef broth or vegetable broth can be used in place of the chicken stock.
- For a spicier stew, stir in some red pepper flakes, chili powder, or a splash of hot sauce.

Sausage Lentil Stew Recipe
This comforting, delicious stew is going to become one of your favorite ways to serve lentils. It's easy, but so tasty!
Ingredients
- 1 pound Jimmy Dean pork sausage
- 1 onion, diced
- 1 green pepper, diced
- 1 red pepper, diced
- 4 cloves garlic, minced
- 1 1/2 tsp cumin
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp sugar
- 8 oz tomato sauce
- 6 cups low sodium chicken broth
- 1/4 cup vinegar
- 1 pound lentils, rinsed
- 1 1/2 pounds russet potatoes, peeled and diced (2 large)
Instructions
- In a large pot, brown the sausage over medium-high heat. Drain off any excess fat.
- While the sausage is cooking, dice the onion and bell peppers. Add them to the pot and cook over medium heat for 2-3 minutes.
- Stir in the garlic, cumin, sugar, salt, pepper, tomato sauce, lentils, and broth. Bring to a boil and simmer for 10 minutes.
- In the meantime, peel and dice the potatoes. Add them to the pot and simmer for an additional 20 minutes, or until the potatoes and lentils are tender. If it starts splattering, turn the heat down to medium low.
Notes
-Instead of brown lentils, you can use green lentils, or even red lentils. Just keep in mind that red lentils cook faster, so you will have to adjust the cooking time.
