These easy keto meatballs are tender, juicy, and packed with flavor. They are so tasty you are going to want to make a double batch and keep them in the freezer for quick dinners!
Traditional meatballs call for bread crumbs, but these meatballs are completely gluten free, which also makes them low carb. And trust me, no one will miss the breadcrumbs.
My kids love them so much that they will sneak them out of the freezer and eat them for after school snacks. So you know they’re gonna be good!
Regular meatballs are filled with breadcrumbs or other ingredients that are high in carbs. But these meatballs are less than one carb per serving.
In place of breadcrumbs, you can use cracker crumbs or oats. You can even use almond flour. But for these meatballs, you don’t have to use any substitutions. A bit of heavy cream makes them nice and moist.
HOW TO MAKE KETO MEATBALLS
- Combine ground beef, egg, cream, worcestershire, and dry ranch dressing mix in a large bowl. Mix together until well blended.
- Scoop mixture into 24 portions and roll into balls.
- Heat a skillet to medium high heat. Add olive oil and cook the meatballs until browned on the outside and no longer pink. It takes about 6-8 minutes.
- Remove meatballs from the pan. Serve hot as is, or with sauce of your choice.
Can I bake the meatballs instead?
Yes, just place them on a lightly greased cookie sheet and bake at 400° for 18-20 minutes, shaking the pan occasionally so they brown evenly.
Can you freeze these meatballs?
Absolutely! After they are baked, let them cool completely, then place them in a single layer on a cookie sheet about ½ inch apart. Freeze for 2-3 hours, then place in heavy duty ziplock bags.
They will last for 3-4 months in the freezer.
You can either let them thaw in the refrigerator for a few hours, or just heat them in the microwave or oven while still frozen.
I have also frozen the raw meatballs after forming them using the same method. When ready to serve, let them thaw in the refrigerator for several hours, then bake as directed.
VARIATIONS:
- Use half ground beef and half ground pork.
- In place of ranch dressing mix, you can use Italian seasoning and a clove of garlic.
- Stir in ¼- ½ cup of grated parmesan cheese.
- You can use ground chicken in place of the beef.
WHAT TO SERVE WITH MEATBALLS
- Serve them with alfredo sauce over zucchini noodles.
- Sesame green beans and roasted cauliflower make great low carb sides.
- If you’re not counting carbs, serve them with barbeque sauce and a side of potatoes.
- They are also perfect with marinara sauce and pasta.
