Low Carb Hamburger Soup
Ground beef in a savory Italian broth loaded with vegetables and simmered to perfection! A perfectly satisfying low carb soup!

Ingredients
- 1 pound lean ground beef
- 1/2 cup sweet onion, diced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 15 oz can diced tomatoes with juice
- 8 oz can tomato sauce
- 5 cups beef broth
- 1 cup fresh green beans, cut in 1" pieces
Instructions
- In a 5-6 quart soup pot, cook ground beef, onion, and celery over medium high heat until meat is browned. Drain off any fat.
- Add minced garlic and saute for about a minutes.
- Add Italian seasoning, salt, pepper, diced tomatoes, tomato sauce, and beef broth. Bring to a boil and simmer uncovered for 10-15 minutes.
- Add green beans, and cook for another 10 minutes or until green beans are tender.
- Garnish with shredded cheese if desired.

I serving is 1 1/3 cups.

Can you use something else besides 15 oz dice tomatoes, even Tomato sauce?
