I’m the first to admit that I’m a soup fanatic! I love that it’s made all in one pot – fewer dishes to wash. I also love that leftovers are perfect for lunch the next day.
But my favorite thing about hearty soup is that it not only fills your belly, it warms you right up on a chilly day. Add some homemade rolls or sourdough bread for an especially comforting meal.
There’s a reason this macaroni hamburger soup has been a classic for years. It’s simple, filling, ready in 30 minutes, and easy to adapt for picky eaters.
Do you cook macaroni before adding to soup?
To add the most flavor to macaroni, it’s best to cook it right in the soup broth. As a bonus, you don’t have to wash an additional pot.
Some recipes do call for cooking macaroni before adding it to the soup, but this recipe is meant to be quick and easy!
How to make hamburger macaroni soup
- SAUTE – Cook beef and onion in a large pot over medium high heat. Add minced garlic and cook another minute. Drain off any fat.
- SIMMER – Stir in the broth, diced tomatoes, Worcestershire, sugar, oregano, basil, salt, and pepper. Bring to a boil over medium heat, simmer for about 5 minutes.
- MACARONI – Add the uncooked elbow macaroni and simmer for another 8 minutes, or until tender. Dump in the vegetables and heat through.
- SERVE – Ladle hot soup into bowls. If desired, garnish with cheddar cheese or parmesan cheese.
Store leftovers in an airtight container in the refrigerator for 3-5 days. You can reheat it in a saucepan, or in individual bowls in the microwave. I love using this microwave cover to prevent splatters!
VARIATIONS:
- You can use chicken broth instead of beef if that’s all you have on hand.
- For an even lower in fat soup, use ground chicken or ground turkey.
- Instead of elbow macaroni, you can use another pasta. Just keep in mind that you may need to adjust the cooking time.
- To add a boost of protein, stir in a can of black beans or kidney beans.

Ground beef macaroni soup is ready in under 30 minutes and is absolutely delicious! We think the best way to enjoy it is with homemade rolls.
Ingredients
- 1 pound lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 6 cups beef broth
- 14.5 oz can diced tomatoes with juice
- 1 Tbsp worcestershire sauce
- 1 Tbsp granulated sugar (or brown sugar)
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 1/2 cups dry macaroni noodles
- 1 1/2 cups frozen mixed vegetables
Instructions
- In a large soup pot, brown the ground beef and onion over medium-high heat. Add garlic and cook another minute. Drain off any excess fat.
- Add the broth, diced tomatoes, Worcestershire, sugar, oregano, basil, salt, and pepper. Bring to a boil, then reduce heat to medium. Simmer for 5 minutes.
- Add the macaroni and simmer for about 8 minutes, or until noodles are tender.
- Add the veggies and heat through. Taste and add salt or additional seasonings if desired.
Notes
-Sugar may seem like a strange ingredient in soup, but it helps cut the acidity of the tomatoes.
