I noticed that it’s been quite awhile since I posted a main dish recipe. Holiday season is kinda like that around here. I’m so busy trying new treat recipes and giving away goodies that we stick to the basics when it comes to dinner time. 😉
I figured some of you might be on goodie overload, so I’m sharing a little something to balance out all that sugar. This is actually I recipe that I tried a couple of months ago. It is not like most crock pot recipes, in that it doesn’t have a lot of liquid. It turns out like a baked chicken. It has a nice garlic-y flavor with a hint of lemon. I think it would be fabulous as a base for lots of other recipes. I can see it shredded on pesto pizza, or tossed with salad. Yum!
The original recipe called for cooking on low for 5-6 hours, but mine was done much quicker. It was finished after 3 hours and was nice and tender. It was only 4:00, so we couldn’t eat dinner yet. But I kept coming back to pick off bits of chicken because it was just so tasty. By 6:00 when my husband got home, it wasn’t quite as juicy. Still yummy, but not as good as it was at 4. So make sure you don’t overcook it!!
Crock Pot Lemon Garlic Chicken
1 tsp oregano
1/2 tsp seasoning salt
1/4 tsp pepper
4 chicken breasts
2 Tbsp butter
1/2 tsp seasoning salt

1/4 cup water
1/4 cup lemon juice
1/4 cup lemon juice
2 cloves garlic, minced
1 tsp chicken bouillon
1 tsp chicken bouillon
Combine oregano, salt, and pepper. Rub onto chicken. Brown chicken in butter on both sides. Place in crock pot. Combine remaining ingredients and pour over. Cook on LOW for about 4 hours. (Mine was done in 3 hours.)

My new slow cooker is way hotter than my old one (the liquid almost boils on high!) Do you think 3 hours would still be okay for cooking time?

I would definitely try it on low. I’d check it after about 2 1/2 hours to see if if it is done.
