EASY WEEKNIGHT DINNER FOR TACO FANS!
At my house, anything with taco flavor is an instant hit! My kids love cheesy taco pasta, and I think I could eat Dorito taco salad every other week.
As a busy mom, I’m always on the lookout for recipes that taste amazing, but don’t take much time to prepare. This crescent roll taco bake definitely fits the bill. And who can resist all the flavors of tacos on a flaky, buttery crust?
If your family likes Taco Tuesday as much as mine does, this recipe is sure to win them over!
HOW TO MAKE CRESCENT ROLL TACO BAKE
- PREP – Spray a 9×13″ dish with cooking spray. Preheat your oven to 350 degrees.
- PREPARE MEAT – In a large skillet, cook the ground meat over medium high heat until browned. Drain off any fat. Add the black beans, salsa, and taco seasoning. Simmer 3-4 minutes.
- CRUST – Unroll the crescent rolls and press them into the bottom of the pan. Make sure the seams are pressed together well. I like to press them about 1/2″ up the side.
- ASSEMBLE – Spread the meat mixture onto the crust. Sprinkle cheese over the top.
- BAKE – Bake at 350° for 20-25 minutes, or until crust is golden brown and cheese is melted.
- TOPPINGS – Arrange shredded lettuce over the top, then sprinkle with tomatoes. Add any other desired garnishes. Cut into slices and enjoy!
How to store leftovers?
You can either just cover the 9×13″ pan with plastic wrap, or transfer leftover slices to an airtight container. I recommend removing the lettuce, tomato, and other garnishes.
The taco casserole will keep for 2-3 days in the refrigerator, but the crust does soften up.
To reheat, I like to use an air fryer, or reheat in the oven. Add the garnishes after you have finished reheating.
VARIATIONS:
- If you prefer, you can press the crescent rolls into a 9″ pie plate and make crescent roll taco pie. The crust will be thicker, so you may need to increase the baking time.
- In place of the black beans, you can use pinto, kidney, or even refried beans.
- Add a cup of corn to the meat mixture.
- For extra spice, stir a can of diced green chiles into the taco meat.
- Feel free to substitute ground chicken or ground turkey for the ground beef.
- Use any cheese you like! Our favorite is a blend of pepper jack and cheddar, but you can use all one kind, or use colby jack, or even a Mexican blend cheese.
- Get creative with your favorite toppings! You could try sliced black olives, diced avocado, bell peppers, jalapeno, salsa, sour cream, green onions, or even crushed tortilla chips or Doritos. Fresh pico or guacamole are great on the side.
What to serve with Crescent Roll Taco:
- You can’t go wrong with cilantro lime rice or mexican rice.
- My family loves simple frozen corn as a side to all Mexican dishes.
- If you’ve got the time, whip up a simple corn salad.
- Fresh seasonal fruit is also a great way to finish out the meal.

CRESCENT ROLL TACO BAKE
Taco Bake with Crescent Rolls
Taco seasoned ground beef and beans, cheese, lettuce, and tomato all atop a flaky crescent roll crust. A perfect weeknight dinner!
Ingredients
- 8 oz can Pillsbury crescent rolls (the sheet dough works great)
- 1 pound lean ground beef
- 15 oz can black beans, drained
- 1 cup salsa
- 2 Tbsp taco seasoning
- 2.2 oz cheddar cheese, grated (3/4 cup)
- 2.2 oz pepper jack cheese, gated (3/4 cup)
- 2 cups shredded lettuce
- 1 large roma tomato, diced
Instructions
- Spray a 9x13" baking dish with non stick cooking spray. Preheat your oven to 350°.
- In a large skillet, cook the ground beef over medium high heat until completely browned. Drain off any fat and add the black beans, salsa, and taco seasoning. Simmer for 3-4 minutes.
- While the meat is browning, unroll the crescent roll dough. Press firmly into the bottom of the prepared pan, making sure to seal all of the seams. I like to press it up the sides about 1/4 - 1/2 inch.
- Spread the meat mixture evenly over the crust. Sprinkle with cheese.
- Bake at 350 degrees for 20-25 minutes, or until crust is light brown and the cheese is melted.
- While it is baking, wash and chop the lettuce and tomatoes.
- Before serving, sprinkle the lettuce and diced tomato over the top of the melted cheese. Cut into slices and serve.
Notes
-If you can find the crescent roll sheet dough, it's easier to use!
-Feel free to add any additional garnishes your family enjoys! We've tried avocado, sour cream, green onions, and crushed tortilla chips.
