Cheesy chicken broccoli rice casserole is a perfect busy weeknight dinner. It’s ready in about 30 minutes, calls for simple ingredients, and transforms broccoli into pure comfort food!
EASY ONE POT MEAL!
At my house washing dishes is the least favorite chore of all my family members. So when I can find a recipe that doesn’t leave a lot of pans to wash, it’s a bonus!
Cooked broccoli is one vegetable that all of my kids will actually eat, especially when it’s topped with cheese. So this cheesy broccoli chicken rice was an instant hit with the whole family.
I love that it’s got protein, grains, and vegetables all in one dish. But of course you can always serve it with a side of vegetables or salad.
How to make chicken broccoli rice casserole
- PREP – Dice the onion and cut the chicken into one inch or smaller pieces.
- SAUTE – Meanwhile, heat the oil in a large skillet over medium high heat. Add the chicken and cook until browned, about 4 minutes. Add the onions and cook another 4 minutes.
- RICE – Stir in the garlic, curry, salt, pepper, uncooked rice, and chicken broth. Bring to a boil, then simmer, covered, over medium heat for about 12 minutes, stirring occasionally.
- BROCCOLI – While the rice is cooking, wash and chop the broccoli. Stir it into the skillet. Cover and cook for another 4-5 minutes, stirring once, until the broccoli and rice are tender.
- CHEESE – Stir in the parmesan, then sprinkle the cheddar over the top. Turn the heat down to low, cover, and cook 2-3 minutes, or until cheese melts.
Store any leftovers in an airtight container in the refrigerator for 3-5 days.
VARIATIONS:
- If you don’t want to use raw chicken, you can use shredded rotisserie chicken instead. Simply saute the onion in the olive oil, then add the chicken with the broccoli.
- You can use frozen broccoli, but we definitely prefer the texture of fresh broccoli florets.
- For a crunchy topping, mix bread crumbs or corn flakes with melted butter and sprinkle on top. Broil for 3-5 minutes, watching closely.
- For an extra creamy dish, you can stir in a can of cream of mushroom soup, cream of chicken (or any “cream of soup”) when you add the broccoli.

Cheesy Chicken Broccoli Rice Skillet
Tender chicken, long grain rice, broccoli, and shredded cheese combine into an easy dinner recipe that is sure to become a favorite meal!
Ingredients
- 1 Tbsp olive oil
- 1 cup diced onion (1 small onion)
- 1 pound boneless, skinless chicken breasts, cubed
- 2 cloves garlic
- 1/2 tsp curry powder
- 1 tsp salt
- 1 tsp pepper
- 1 cup raw long-grain rice
- 2 1/2 cups low sodium chicken broth
- 3 cups chopped broccoli (about 8 ounces)
- 1/4 cup parmesan cheese
Instructions
- Cut chicken into bite sized pieces. Brown over medium-high heat with the oil in a large skillet for about 4 minutes. Add the diced onion and cook for another 4 minutes.
- Add garlic, curry, salt, pepper, uncooked rice, and chicken broth. Bring to a boil, cover, and simmer over medium heat for about 12 minutes, stirring occasionally.
- Wash and chop the broccoli while the rice cooks. Stir the broccoli into the hot rice mixture. Cover and cook for another 4-5 minutes, stirring once, until the broccoli and rice are tender.
- Stir in the parmesan cheese, then sprinkle the shredded cheese over the top. Turn to the lowest heat and cook, covered, for 2-3 minutes, or until the cheese is melted.
Notes
-Store leftovers in the fridge for 3-5 days.
