If you’re a fan of grilled cheese and love bacon, then you’ve come to the right place! This delicious bacon grilled cheese combines the two into one epic sandwich.
With crispy bacon, toasted bread, and melted cheese, this sandwich really is the perfect combination of flavors and textures. Comfort food doesn’t get much easier!
To make a delicious grilled cheese with bacon sandwich, you’ll need a few key ingredients. Here’s the lineup:
- Bread – Choose one that’s hearty enough that it won’t fall apart under the weight of all that melted cheese. I’ve used sourdough, wheat bread, and the sliced french bread from Costco all with great results.
- Cheese – My kids are die hard cheddar fans, but you can use any cheese that melts well. Cheddar, colby jack, pepper jack, mozzarella, and provolone all work great. I actually love a combination of cheeses for the best flavor.
- Bacon – You can use any type of bacon you love, just make sure that it’s cooked until crispy and drained on paper towels. No one wants rubbery bacon on a sandwich!
- Butter – Make sure you use salted butter for the best flavor. I’ve tried using mayonnaise instead of salted butter, and it doesn’t have that same finger lickin’ good taste.
HOW TO MAKE BACON GRILLED CHEESE
- PREP – Cook your bacon strips until crispy, then drain on paper towels. I like to bake my bacon. Sometimes I use the precooked bacon from Costco and just cook it a bit longer to crisp it up. Great time saver!
Wipe out your skillet and heat it to low or medium low. - ASSEMBLE – Place two slices of bread on the counter. Arrange one ounce of the cheese, three slices of bacon, then another ounce of cheese on one slice of bread. Place the other slice of bread on top.
- BUTTER – Spread 1 1/2 teaspoons of butter on the outside of the top slice of bread. Place butter side down on the skillet. Spread another 1 1/2 teaspoons of butter on the outside of the top piece of bread.
- COOK – Cook for 3-4 minutes, until the bread is lightly browned. Carefully flip and cook another 3-4 minutes or until bread is toasted and cheese is oozing out. To make sure the cheese melts before the bread is browned, you can add a lid for the first 2 minutes of cooking.
- SERVE – You definitely want to serve your grilled cheese immediately, while the cheese is nice and gooey!
VARIATIONS:
- You can also use a panini press or a grill pan for added texture and flavor. A panini press cuts the cooking time in half.
- Love jalapeno poppers? Add some diced jalapeno peppers to your sandwich for a nice kick.
- For a sweet and salty sandwich, use candied bacon.
What to serve with grilled cheese?
- Tomato soup is a classic side, but I personally prefer cream of cauliflower soup. Oh so good with the bacon!
- On warm days, you can’t go wrong with a simple salad. This cheesecake fruit salad is a family favorite.
- For an extra quick meal, just serve some fresh fruit and veggies with dip.

BACON GRILLED CHEESE SANDWICH
Grilled Cheese with Bacon
It doesn't get much easier than this grilled bacon and cheese sandwich. Perfect for lunch, dinner, or game night!
Ingredients
- 4 2 oz slices white bread
- 2 Tbsp salted butter
- 6 slices bacon, cooked until crispy
- 4 ounces cheddar cheese, sliced
Instructions
- Cook the bacon until crispy; drain on paper towels. I like to use the precooked bacon from Costco and just cook it for a couple minutes to crisp it up.
- Wipe out your skillet and turn it to low or medium low heat.
- On one slice of bread, place an ounce of cheese, 3 slices of bacon, then another ounce of cheese. Top with another slice of bread.
- Spread 1 1/2 tsp of butter on the outside of the top slice of bread. Place butter side down in the warm skillet. Spread another 1 1/2 tsp of butter on the outside of the top piece of bread.
- Repeat steps 3-4 for the other sandwich (or for as many as you are making).
- Cook for 3-4 minutes, or until the bread is lightly toasted. I like to add a lid for the first 2-3 minutes to help the cheese melt.
- Carefully flip the sandwiches and cook for another 3-4 minutes or until the bread is toasted and the cheese is melted and starting to ooze out.
- Cut sandwiches in half and serve immediately. Enjoy!
Notes
-If I'm using raw bacon, I like to bake it in the oven at 400° for about 20 minutes on a cooling rack placed in a rimmed cookie sheet.
-Feel free to use any type of cheese you love, or a combination of cheeses.
