Apple Almond Muffins are loaded with fresh chunks of apple, then topped with sugar and sliced almonds. A simple fall muffin recipe everyone will love.
I love baking with apples, especially during the fall. Cinnamon swirl apple bread, cinnamon apple Dutch baby pancakes, and apple snickerdoodle muffins are a few more family favorites!
Now that school is back in session, I like to keep a batch of muffins in the freezer. My kids can just grab a couple, heat them for a few seconds in the microwave, and they have a yummy breakfast that can be eaten as they head out the door.
These apple muffins freeze up nicely, although you have to be gentle with them or the almonds tend to slide off. I like to place them in a single layer in a large rectangle container with an airtight lid.
Because these muffins have chunks of apple in them, the batter is very stiff. That helps it support the weight of the apples. Instead of being light and fluffy like some muffins, they have more of a pound cake texture.
I actually overcooked this batch a little, but the apples helped them stay moist. Adding the sugar to the top makes them so pretty, and I love the crunch from the sliced almonds!
How to make apple almond muffins:
1- Cream butter and sugar, then add the eggs and flavorings. Stir in the chopped apples.
2- Whisk together the dry ingredients and stir gently into the apple mixture.
3- Scoop batter into greased muffin tins and sprinkle with sugar and sliced almonds.
4- Bake at 375° for 15-18 minutes or until lightly browned

Apple Almond Muffins
Tasty muffins loaded with chopped apples and topped with sugary sliced almonds.
Ingredients
- 1/3 cup soft butter
- 3/4 cup sugar
- 2 eggs
- 1 cup finely chopped apple (about 1 large)
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2-3 Tbsp sugar for tops of muffins
- 1/4 cup sliced almonds
Instructions
- Beat butter and sugar in a large mixing bowl till fluffy. Beat in the eggs, vanilla, and almond extract. Stir in the chopped apple.
- Whisk together flour, baking powder, and salt in a small bowl. Add to the wet ingredients and stir gently till just combined. Batter will be stiff.
- Scoop batter into well greased muffin tins. Sprinkle tops of muffins with sugar and sliced almonds.
- Bake at 375° for 15-18 minutes or till lightly browned.
