FAMILY FAVORITE SLOW COOKER RECIPE
Everyone in my family loves potatoes, so naturally this dish was an instant hit. It’s similar to my slow cooker scalloped potato recipe, but adding ham takes it from a delicious side dish to a hearty meal.
It’s a great recipe to make when you have leftover holiday ham, but I will sometimes buy ham just so I can make it. Yes, it’s that good!
For a complete meal, I like to add a side salad or fruit salad and steamed broccoli.
How to make crockpot scalloped potatoes with ham
- PREP – Spray a 6 quart crock pot with cooking spray. Peel and slice potatoes. Dice the ham and grate the cheese.
- LAYER – Arrange half the slices of potatoes, seasonings, onions, and chunks of ham, and a third of the cheese. Repeat layers.
- TOPPING – Whisk together the soup and milk; spread the soup mixture over the top.
- COOK – Cover the crock pot and cook on low for 6-8 hours, or until potatoes are tender. Spread the last third of the cheese on top. Cover and cook for another 5 minutes, or until melted.
Serve immediately and be prepared for smiles around the table, as well as empty plates!
Leftover cheesy potatoes and ham can be stored in the refrigerator in an airtight container for up to five days. They taste just as amazing the next day!
VARIATIONS:
- I usually use mild cheddar because that’s what I have on hand, but you can use sharp cheddar cheese, swiss, or any cheese that melts well. For a spicy kick, try pepper jack cheese!
- Instead of russets, you can try yukon gold potatoes, red potatoes, or even sweet potatoes.
- You can replace the mushroom soup with cream of chicken soup or potato soup.
- For an even creamier dish, use 1/2 – 3/4 cup of milk or heavy cream.
- If you prefer, you can cube your potatoes.
PRO TIPS:
- This dish does seem to do better cooked over low heat, so make sure you plan ahead to allow 6-8 hours of cooking time. When I try to rush it and use high heat, the potatoes tend to cook unevenly, and the sauce burns around the edges.
- Thin slices of potato cook faster, but they also tend to fall apart. I like to cut mine about 1/4-inch thick, but you can adjust to your preference.
- For easier cleanup, you can use crockpot liners.

Sliced potatoes, ham, and cheese in a creamy sauce - the perfect comfort food!
Ingredients
- 3 pounds russet potatoes
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 onion, diced
- 2 cups diced ham
- 1 1/2 cups shredded cheddar cheese, divided
- 1 10.25 oz can cream of mushroom soup
- 1/4 cup milk
Instructions
- Spray the bottom and sides of a 6 quart slow cooker with cooking spray.
- Peel and slice the potatoes and dice the ham. Grate the cheese.
- In the bottom of the slow cooker, layer half of the potato slices, half the garlic powder and pepper, half the onion, half the ham, and a third of the cheese. Repeat layers.
- Mix the soup and milk together and spread evenly over the top. Place the lid on the slow cooker.
- Cook on LOW for 6-8 hours, or until the potatoes are tender.
- Sprinkle the last third of the shredded cheese over the top of the potatoes. Cover for about 5 minutes, or until the cheese melts.
