Meal Plan #2 includes Oat Waffles with scrambled eggs, BBQ Meatballs with Crockpot Scalloped Potatoes, Mashed Potato Chicken Casserole, Taco Soup with Cornbread, and Chicken Flautas with Cilantro Lime Rice. For dessert – Baked Cinnamon Donuts.
WHY USE A WEEKLY MEAL PLAN?
- ELIMINATE INDECISION – I can’t tell you how much time I used to waste scouring through cookbooks trying to decide what to make for dinner, sometimes at the last minute. Having a menu plan already decided every week is such a time saver!
- SAVE TIME – Having a complete grocery list all typed up saves all those last minute trips to the store because you’re missing a key ingredient.
- HINDER IMPULSE BUYS – Planning ahead and having a menu plan also helps save money on all those impulse buys on emergency trips to the store. Tell me we’re not the only ones that end up buying junk food on those “quick trips”.
- EAT HEALTHIER – I’ve found that when I don’t have a weekly menu plan in place, we end up eating out much more often. The cost of those meals adds up quickly, especially when you have a large family. Not to mention it’s not usually the healthiest option!
- LESS WASTE – In addition, when you have a grocery list customized to your menu, you don’t end up buying a bunch of ingredients that end up in the trash.
If you want to create your own menu plan, you can always print out a blank menu plan with grocery list and use any recipes you like.
Weekly Meal Plan #1
OAT WAFFLES
My kids all get excited when they know we will be having breakfast for dinner! We love to serve these hearty waffles with vanilla pudding sauce and fresh fruit, but they are also fantastic just with maple syrup.
Serve them with scrambled eggs or omelettes for a complete meal.
BBQ MEATBALLS
I like to make my own meatballs and keep them in the freezer for quick meals like this. You can of course use store bought meatballs.
Serve these with slow cooker cheesy scalloped potatoes and everyone at the table will be smiling!
MASHED POTATO CHICKEN CASSEROLE
This is one of my husband’s very favorite dinner recipes. A mashed potato shell, creamy filling with chicken and vegetables, cheese, and fried onions make every bite a burst of flavor and texture.
TACO SOUP
I’ve been making this quick and delicious soup for decades, and it is always well received. The garnishes take it over the top.
Serve it with cornbread and your family will be thrilled! I like to make a double batch and serve the leftovers for breakfast with honey butter.
CHICKEN FLAUTAS
Creamy chicken filling wrapped in a crunchy baked tortilla shell. We love dipping them in salsa or guacamole, but they are plenty tasty just on their own.
Cilantro lime rice makes a perfect side dish, and you can also add green salad or black beans.
DESSERT FOR THE WEEK
BAKED CINNAMON SUGAR DONUTS
No splattering oil or burns with this donut recipe. Baked donuts are so easy to make, but taste amazing! You probably have all the ingredients you need.
Just pick up one of these donut pans and be prepared for some dang tasty donuts!
