Incredible Homemade Waffles -With just a few simple ingredients, you can whip up a batch of these Crazy Good Waffles. You will love them!
There’s a reason these waffles are dubbed “waffles of insane greatness” in the blogosphere. They really are crazy good!
One thing I love about summer is that since everyone isn’t rushing out the door for school, we have time to have breakfast together. And I am a big fan of homemade breakfast. Unlike my boys, I am not very fond of cereal. It has been fun this summer to try a few new breakfast recipes.
I found this waffle recipe over at Real Mom Kitchen. Laura mentioned that they weren’t very sweet, so I added a little sugar like she suggested.
These waffles of insane greatness really are incredible! The cornstarch makes them nice and crispy on the outside, and the inside is tender and yummy.
The only downside is that you must let the batter sit for 30 minutes before you cook them. That works fine for me, because it gives me time to whip up a batch of buttermilk syrup, or whip some cream and slice up some berries. They are tasty with just about anything on top!
So, so good! Hurry and whip up a batch before the kiddos head back to school. 🙂

Waffles of Insane Greatness
Buttermilk waffles made extra crispy with the addition of cornstarch.
Ingredients
- 3 cups buttermilk
- 1/2 cup oil
- 3 eggs
- 2 tsp vanilla
- 3 Tbsp sugar
- 2 1/4 cups flour
- 3/4 cup cornstarch
- 1 1/2 tsp baking powder
- 3/4 tsp baking soda
- 3/4 tsp salt
Instructions
- Whisk together buttermilk, oil, eggs, and vanilla in a large bowl.
- Combine sugar, flour, cornstarch, baking powder, soda, and salt in another bowl. Whisk into wet ingredients till barely blended.
- Let batter sit for 30 minutes.
- Cook in a hot waffle iron till golden brown. Serve warm.
Notes
-A soup ladle works great for scooping the batter onto the waffle iron.

I made these waffles and they were amazing the only thing I would say they’re not crispy on the outside but they are very light and airy and delish.

Can anyone tell me before I try this recipe if these are light an crispy or dense an tuff ? i am aiming for light an crispy kind of like the eggo frozen only better of course. I have tried so many an haven’t found the right one yet. i would appreciate your opinion from anyone who has tried.

Try the Waring Pro Good Night Waffle recipe, it’s an overnight recipe. It’s the crispiest we’ve found. You can also use a pancake recipe and use 1.5 – 2 sticks of butter, I know, but it makes them crispy for sure. They need to be eaten right away to realize the crisp.
