Cookie Base:
3/4 cup butter or margarine
1 cup sugar
2 eggs
2tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1 tsp salt
Cream butter and sugar. Add eggs and flavorings and beat. Stir in dry ingredients. Chill for about an hour. Pat dough into the bottom of a foil lined and greased 9×13″ cake pan. Bake at 350 for about 20-25 minutes. Don’t overbake, or they will be hard to cut. Cool, then lift out of the pan using the foil. Cut into 12 squares.
Buttercream Frosting:
1/3 cup soft butter
2 1/2-3 cups powdered sugar (I just dumped it in the bowl)
green food coloring
about 2 tbsp milk
1/2 tsp vanilla
dash salt
Beat all ingredients till smooth and creamy, adding enough milk as needed. Spread a layer of green frosting on top of each square.
You will have frosting leftover. Add cocoa till frosting is a nice brown color. (You may need to add a little more milk.)
Place the chocolate frosting in a pastry bag (or ziplock with the corner snipped). Pipe frosting on to make hair. Cut a marshmallow in half for the eyes. Pipe on a stitched smile and dot the eyes. Repeat for remaining cookies.
