If you are looking to change up your regular pizza routine, give this Bacon Potato Pizza a try! It’s a tasty way to use up leftover mashed potatoes.
My boys love homemade pizza. Sometimes we get in a pizza rut, so I try to look for recipes that are not our usual ham and pineapple. Taco pizza is one of our favorites.
My 12 year old actually found this Bacon Potato Pizza recipe in one of my cookbooks and and asked if we could try it. I have never heard of potato pizza, but I figured anything with bacon is bound to be good. 🙂
This pizza is far from traditional. It doesn’t even have sauce! But it was hearty and delicious, and the whole family loved it. I was worried that my kids would complain about the onions, because they will not touch pizza with onions.
But since it cooked up with the bacon, it just blended right in and added great flavor. Even the 6 year old finished off his pieces without picking anything off. Score!
To make this recipe even easier, you could use a can of pizza crust and leftover or instant mashed potatoes.
How to make Bacon Potato Pizza
Ingredients:
- pizza crust
- potatoes
- milk
- salt
- bacon
- onion
- red pepper
- cheddar cheese
- mozzarella cheese
Boil potatoes in salted water till tender. Drain and mash potatoes. Add milk and salt to taste. Set aside.
Roll pizza crust out on a 14″ pizza pan and prick all over with a fork. Bake at 350° for about 15 minutes or till barely browned.
Meanwhile, partially cook bacon in a medium hot skillet. Drain off all but about a tablespoon of the fat. Add onion and red pepper. Cook till bacon is crisp and veggies are tender. Drain really well. Spread the mashed potatoes over the crust. Cover with the bacon/veggie mixture. Top with cheeses.
Bake at 375° for 15-20 minutes or till cheese is melted.

Bacon Potato Pizza
Pizza topped with mashed potatoes, bacon, peppers, and two kinds of cheese.
Ingredients
- 1 recipe for pizza crust
- 3 large potatoes, peeled and cubed
- 1/4 cup milk
- Salt to taste
- 1 pound bacon, diced
- 1 onion, diced
- 1 red pepper, diced
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded mozzarella cheese
Instructions

Yum. We had homemade pizza night planned for last night anyway – so we made this one, and a Spinach Artichoke Dip pizza. This one was so yummy. Here’s a cute picture of my 6-month old chowing down on the potatoes!

This sounds good! Being in S. Korea we have encountered many different pizza topping, fish, potatoes, beef bulgogi. You name it, they put it on pizza. Maybe I’ll talk my husband into trying it! My favorite pizza is chicken supreme. With red onions. YUM!
