New Years Eve is just around the corner, and appetizers like this cheeseball, hot sausage dip, and caramel apple dip are always popular at my house.
Pimento Cheese Ball
I grew up eating this cheese ball for just about every party at my house. We always had it for New Year’s Eve, and we often had it for Thanksgiving as well. Everyone in my family loved it, and we would finish it off in a matter of minutes.
It has a very mild flavor, so even younger kids like it. My kids like it best with buttery Ritz crackers, but I actually prefer it with Triscuits or Wheat Thins. Totally a matter of preference, so serve it with whatever your family likes!
Tips for making pimento cheese ball:
-Make sure that your cream cheese and butter are both at room temperature. If they have cold spots, you will end up with lumps. I like to take them out of the fridge several hours ahead of time, or even the night before.
-The mixture will be pretty soft after you beat it. It can be challenging to roll, so I like to press it into a plastic wrap lined bowl and chill it for about an hour. It will set up in the fridge and be much easier to work with.
-I like my nuts chopped really fine for a cheese ball. I use this nut chopper for my pecans, and it works like a charm! Much easier than pulling out a cutting board. I chop up a bunch of nuts and just store the chopper in the refrigerator.
How to make pimento cheese ball:
Ingredients:
- cream cheese
- butter
- pimento cheese spread
- cheddar cheese
- garlic salt
- onion salt
- pecans
Combine cream cheese, butter, pimento cheese spread, cheddar, garlic salt, and onion salt in a mixing bowl. Beat till smooth and creamy.
Line a small bowl with plastic wrap. Press cheese mixture firmly into bowl. Cover and chill for 30-60 minutes.
Remove plastic wrap and roll mixture into a ball. Roll in chopped pecans. Serve with crackers.
Finishing off your cheese ball:
I like to roll mine in chopped pecans, but you can use what you like. You could also roll it in sliced almonds or chopped walnuts. If you don’t like nuts, you can roll it in fresh herbs like parsley, or even roll it in bacon.
I usually just make one large cheese ball, but you can make two smaller cheese balls if you prefer. You may need a few extra nuts if you go that route.

- 8 oz cream cheese, softened to room temperature
- 1/2 cup butter, softened to room temperature
- 1 5 oz jar pimento cheese spread
- 3/4 cup finely grated cheddar cheese
- Dash of garlic salt
- Dash of onion salt
- 1 cup finely chopped pecans
Instructions
- Combine all ingredients but nuts in a mixing bowl. Beat till smooth.
- Line a small bowl with plastic wrap. Press cheese mixture firmly into bowl. Cover and chill for 30-60 minutes.

Yes, you can definitely make it a day before and chill it until you are ready to serve it. I actually like to take my cheese balls out of the fridge 30-40 minutes before serving so they soften up a bit.

I used the Kraft pimento cheese spread. You can usually find it at Walmart.
