My kids call this cheesy focaccia bread “that yummy bread”, and for good reason. It is daaang good! It is also super fast and easy, so it is pretty much one of my very favorite side dishes. I try to serve it every time we have Italian food.
I don’t like to admit this, but once on a particularly hairy day I served it as a main dish. Please don’t judge me- we also had a green salad and carrots with dip, so it balanced out, OK. Thank you. Now go make some of this cheese bread!

Easy Focaccia Cheese Bread Recipe
Focaccia Cheese Bread
Herbed focaccia bread topped with two kinds of cheeses.
Ingredients
- 2 3/4 cups flour
- 1 tsp salt
- 1 tsp sugar
- 1 Tbsp SAF instant yeast
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1 tsp basil
- 1 pinch black pepper
- 1 Tbsp olive oil
- 1 cup hot water
- 1 Tbsp olive oil
- 1 Tbsp Parmesan cheese
- 1-2 cups grated mozzarella cheese
Instructions
- Combine all dry ingredients in a large mixing bowl. Stir in 1 tablespoon olive oil and water. Knead a few times on a greased countertop till smooth. Cover and let rise for 20 minutes.
- Pat dough 1/2" thick on a greased cookie sheet. Brush with 2 tablespoons olive oil. Sprinkle with cheeses.
- Bake at 425° for about 12 minutes or till lightly browned. Serve warm.
