Did you know that today is National Waffle Day? If my kids got to vote, there would be a national waffle month. They love waffles, and I can’t say I blame them.
They are a delicious way to start the day, don’t you agree? Of course, since it’s a special day, I might even surprise them my serving waffles for dinner!
This recipe came about after my son made cinnamon roll waffles at school using canned dough. I’m trying to cut down on the processed food we eat, so I decided to come up with a from scratch version.
I knew I didn’t want to have to wait for yeast dough to rise, so I found a recipe for biscuit like cinnamon rolls in one of my old cookbooks. It’s pretty basic. Make the dough, roll it out, spread on the filling, roll it up, cut into slices.
I threw one on the waffle iron, and crossed my fingers. . . . .
Whoa. First up, they filled the house with an amazing spicy aroma while they were cooking. Then they came from the waffle iron with crispy cinnamon crunch along the edges, and ooey gooey cinnamon in the middle.
I thought my kids were going to rise up in rebellion while they had to wait for me to take pictures. When we finally sat down to eat, I drizzled them with a simple icing. Oh man. A mouthwatering success of epic proportions! People, you have to try these. Immediately.
Word of Warning – The cinnamon mixture does make a mess, so I recommend using a waffle iron with removable plates for easier cleanup. My brand is no longer sold, but you can find several versions on amazon.
Cinnamon Roll Waffles
Loaded with swirls of cinnamon sugar and dripping with glaze, these cinnamon rolls waffles would make any morning a little bit brighter.
Ingredients
Waffles
- 2 1/2 cups flour
- 2 Tbsp sugar
- 1 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cups buttermilk
- 3 Tbsp butter, melted
Filling
- 2/3 cup brown sugar
- 1 Tbsp cinnamon
- 1/8 tsp salt
- 2 Tbsp butter, melted
Icing
- 2/3 cup powdered sugar
- 2 tsp butter, melted
- 1/4 tsp almond extract (or vanilla)
- 2-3 tsp buttermilk (or milk)
Instructions
- Whisk together flour, sugar, baking powder, soda, and salt in a large mixing bowl.
- Mix together the buttermilk and melted butter, pour into the dry ingredients. Stir lightly till just combined. Dough will be sticky.
- Generously flour your countertop, and roll or pat into a rectangle that is about 12″ x 9″.
- Combine all the filling ingredients in a small bowl. Spread evenly over the dough.
- Roll up lengthwise and pinch to seal the seam.
- Cut into 2-3″ slices, and place on a hot waffle iron that has been brushed with oil. Press down firmly for a few seconds.
- Cook for about 2 minutes or till golden brown.
- Whisk together the icing ingredients and drizzle over hot waffles.
Notes
These waffles do make a mess of your waffle iron, so I recommend using a waffle iron with removable plates for easier cleanup.

Made these this morning. Followed the recipe to a T.
I didnโt add enough flour to my surface when patting it out to shape (add more flour than you think you need!) and had a huge mess. Not the first time Iโve had a huge mess, que sera, sera.
For reals, only make these if your waffle maker has removable plates. Kara is not kidding when she recommends this!
These are tasty! We felt that they needed more cinnamon, next time I would add an extra tablespoon. Originally, I set out butter and maple syrup, but after tasting the waffles with the icing, I quickly put the syrup away.
Clean your removable waffle plates immediately. I know, I knowโฆ you want to sit down and enjoy your reward hot off the griddle, but take those few minutes to clean those plates! I took mine off using a pot holder and scraped as much sugar off (onto the hot waffles). Then took them to the sink and submerged them in hot soapy water. Using a dishcloth, I held each one while scrubbing with a brush. They came clean with no problem.

Would this work with cinnamon chips just mixed in and scooping dough onto the iron? Also would this work as a base recipe to incorporate other flavors? Thanks

I haven’t tried it with cinnamon chips. I love them, so I think it would be tasty. On the other hand, they may stick to the waffle iron and burn. As for other flavors, I’d stick with a traditional waffle recipe. This one is thick and harder to work with simply because you are rolling the dough.

This is our family’s go-to holiday recipe!! Trying it out with company this weekend but wondering, do you think I could make the rolls the night before and store them in the refrigerator (wrapped tightly in parchment and plastic wrap) until morning?

Dough made with baking powder typically doesn’t do as well left overnight, because the baking powder activates as soon as it gets wet. So by the morning it will have gone flat. But for waffles, it might not matter too much. You could certainly give it a try. ๐

If you donโt have buttermilk, you can add one tablespoon of white vinegar to the milk and let it sit while you measure out the other ingredients. It will curdle and thicken as it sits.

Can I use milk instead of buttermilk?

The acid in the buttermilk offsets the flavor of the baking soda, so they would have a bitter taste. Plus the buttermilk is thicker, so the batter would be really sticky. If you don’t have buttermilk, you could use a cup of milk and 1/4 cup of sour cream or plain yogurt.

Works better in a muffin tin than a waffle iron. Yummy but messes up the waffle iron. It’s going to be tricky to clean.

You can totally use a square waffle iron. You can just cut them much larger to fill the space (just make sure you squish them down well), or you can cut them the same size. You’ll have extra space at the sides of the pan, but they’ll cook just fine!
