CHOCOLATE MINT SURPRISE COOKIES
I know I’ve mentioned it before, but chocolate and mint together is one of my very favorite flavors in the world! I tweaked my chocolate truffle cookie recipe to come up with these wonderful mint surprise cookies.
The powdered sugar in these mint truffle cookies gives them a very smooth fudge-like texture. And they kind of just melt in your mouth
On the outside, they look like a simple chocolate cookie, but then you bite into one and get a mint truffle explosion. Awesome stuff!
To make them even more irresistible, you melt some mint kisses and drizzle them over the tops of the cookies. That’s three layers of flavor!
Mint kisses are only available during the holiday season, so hurry and make these while you can! Or if you’re crazy about chocolate mint like I am, you can freeze the kisses so you can enjoy them later on during the year. 🙂

HOW TO MAKE MINT TRUFFLE COOKIES
INGREDIENTS NEEDED TO MAKE THESE COOKIES:
- butter, softened to room temperature (I use salted butter.)
- powdered sugar (Also called confectioners sugar, it gives the cookies an extra smooth texture.)
- unsweetened cocoa powder (I use regular Hershey’s cocoa.)
- sour cream (regular, light, and fat free all work)
- vanilla extract
- all purpose flour
- Hershey’s mint truffle kisses (for the inside and tops of the cookies)
- Make a simple cookie dough by creaming together the butter, powdered sugar, and cocoa powder. Beat in the sour cream and vanilla, then stir in the flour.
- Preheat the oven to 350 degrees and unwrap the kisses.
- Scoop about a tablespoon of cookie dough and wrap it around an unwrapped mint kiss. (I like to use a cookie scoop to ensure that the cookies are the same size and bake evenly.)
- Place balls of dough on parchment or silicone lined baking sheets. (You can use cooking spray instead, but the bottoms of the cookies have prettier edges with parchment or silpat.)
- Bake at 350° for about 8-10 minutes, just until set. Cool on pans for 5 minutes, then remove to wire racks to cool.
- Melt remaining kisses and drizzle over the tops of the cooled cookies. I like to melt mine in a glass bowl in the microwave at half power, stirring every 30 seconds till smooth.
PRO TIP:
-For prettiest chocolate drizzle, pour the melted chocolate into a small ziplock bag. Snip a tiny corner off the bag and squeeze the chocolate through the hole.
