We love Mexican food at our house! Whenever we eat at a Mexican restaurant, my 15 year old orders shrimp tacos with mango salsa. He loves them! So much that for his birthday this year he asked me to make shrimp tacos for dinner. I don’t cook with shrimp very often, so I didn’t have a recipe. I scoured my cookbooks and the internet, and combined about three recipes to come up with these shrimp tacos. They were a hit not just with the birthday boy, but with everyone in the family. The mango salsa is a perfect compliment to the spicy shrimp. So darn yummy! And much more affordable than eating out. 🙂
Shrimp Tacos
16-20 uncooked shrimp (about a pound), peeled and deveined
1-2 tsp chipotle chili powder
1/2 tsp cajun seasoning
1 Tbsp sugar
1/2- 1 tsp kosher salt
1 Tbsp olive oil
Combine shrimp with seasonings, sugar, and salt. Mix till all shrimp are well coated. Saute shrimp in olive oil for about 3 minutes or till pink.
Mango Salsa (from my friend Heidi at Honeybear Lane)
1-2 mangoes, diced
1 avocado, diced
2 roma tomatoes, diced
1/2 tsp lime juice
1/4 cup chopped fresh cilantro
1/4 cup finely diced white onion
3 cloves fresh garlic, minced
Combine all ingredients and let sit 30 minutes to blend flavors.
Additional ingredients:
Flour tortillas
Chopped lettuce
Grated cheese
Sour cream
Serve tacos with shrimp, salsa, and any other taco fixings that your family enjoys!
