Oh my goodness the weather yesterday was GORGEOUS! It is amazing how much my whole attitude on life improves when the sun is shining. Just love it! We went to my son’s baseball game and it was just wonderful sitting in the sun.
So I am straightening things up a bit. And cleaning the carpets. And painting a few walls. And washing a few windows. And dusting. Lots of dusting. Because some of my dust bunnies have grown into dust jackrabbits. Not a pretty sight. It will be sooo nice when it is all done. I love me a good clean house!
I am actually looking forward to cooking this week. We have been so busy that we’ve eaten a lot of sandwiches and wraps for dinner. Or eaten on the run. I am not very fond of fast food. Or cereal. Which is what we have for breakfast when I don’t have time to make anything else.
I love having a hot breakfast. I usually keep a batch of homemade muffins in the freezer so I can whip a few out and heat them in the microwave. Voila! Instant hot breakfast.
Waffles make a frequent appearance at our table on the weekends. I have a favorite waffle recipe that I usually make, but we were out of buttermilk one time, so I tried this recipe. I’ve tried several other non-buttermilk waffle recipes in the past, and this one was the best so far.
My whole family really loved these. This time I used the buttermilk syrup that is to die for, but they are also great with vanilla sauce and berries. I hope your family enjoys them as much as we did.
EASY WAFFLES
Fast and Easy Waffles
Need waffles in a hurry? This recipe calls for ingredients you already have on hand, and they are ready in about 15 minutes!
Ingredients
- 2 1/2 cups all purpose flour
- 4 tsp baking powder
- 2 Tbsp sugar
- 1/2 tsp salt
- 2 eggs, beaten
- 2 1/3 cups milk
- 1/4 cup oil
Instructions
- Whisk together flour, baking powder, sugar, and salt in a large mixing bowl (with a pourable spout if you have one.)
- Whisk together eggs, milk, and oil in a small bowl. Stir into dry ingredients till just combined.
- Cook in a hot waffle iron. Serve hot with your choice of syrup or toppings.
