Spinach Salad with Bacon – a homemade poppy seed dressing makes this salad extra tasty. It’s loaded with tasty ingredients like boiled eggs, celery, and cheese.
We like serving this salad with main dishes like Breaded Mayonnaise Chicken and Chicken Pillows.
This is one of my very favorite salads ever. I’m pretty sure I could make it every week and not get tired of it. There are so many flavors and textures going on, every bite is delicious!
I struggle with anemia, and since spinach is a good source of iron, I try to eat it as often as I can. I know most people like eating their spinach in smoothies, but they’re not really my thing. If I have a choice, I’d much rather chew my food instead of drinking it. This salad has plenty of crunch!
Of course, I will eat salad in just about any form, but my kids are more likely to finish theirs if it has bacon in it. Bacon makes just about everything more delicious, doesn’t it?
How to Make Bacon Spinach Salad
Ingredients:
- baby spinach
- celery
- green onions
- crumbled bacon
- hard boiled eggs
- mozzarella cheese
Toss spinach, celery, and green onions in a salad bowl. Sprinkle mozzarella cheese, bacon, and chopped hard boiled eggs on top of salad. Serve with poppy seed dressing. Refrigerate leftovers.
How to make Spinach Salad Dressing
Ingredients:
- vegetable oil (or another oil that is liquid at room temperature)
- granulated sugar
- white vinegar
- salt
- poppy seeds
- mustard
Whisk all ingredients together in a small bowl. Serve with salad. Store leftovers at room temperature or in the refrigerator.
Tip: I’ve tried the dressing with red wine vinegar and apple cider vinegar, and everyone likes the plain white vinegar the best. It’s more simple, so the flavor doesn’t overpower or compete with the other flavors in the salad.
Variations on Spinach Salad
– Sometimes I add some iceberg lettuce to the spinach, that is also tasty.
-Don’t feel like you have to use all of the toppings I listed, you can do whatever you like. I’ve had it with mandarin oranges, strawberries, mushrooms, sugared almonds, and lots of other things and it is always wonderful. So be creative! Spinach Salad
Tasty spinach salad with bacon, eggs, celery, cheese, and homemade poppy seed dressing.
Ingredients
Salad
- 1 (6 ounce) bag spinach
- 1 cup sliced celery
- 3 green onions, sliced
- 6 strips bacon, cooked and crumbled
- 3 hard boiled eggs, diced
- 1 cup shredded mozzarella cheese
Poppy Seed Dressing
- 6 Tbsp vegetable oil
- 2 1/2 Tbsp sugar
- 2 1/2 Tbsp white vinegar
- 1/2 tsp salt
- 1 1/2 tsp poppy seeds
- 2 drops mustard
Instructions
- Cook bacon till very crispy; drain on paper towels. Crumble and set aside.
- Prepare dressing. Whisk together oil, sugar, vinegar, salt, poppy seeds, and mustard in a small bowl till sugar dissolves. Set aside.
- Slice celery, and green onions.
- Toss spinach, celery, and green onions in an a large salad bowl. Top with mozzarella cheese, diced eggs, and bacon.
- Serve salad with dressing on the side, or add dressing just before serving and stir till salad is well coated.
