This seven layer salad has been a favorite of mine since I was a child. I remember my mom making it for church potlucks. It is a perfect potluck salad because it can be prepared ahead of time. The layer of dressing on the top keeps the salad ingredients fresh and crispy. And any salad garnished with bacon and hard boiled eggs is a winner in my book!
>I’ve tried several variations of this salad, and they have all been delicious. Tomatoes are a great addition, but I think they are better added to the top right before serving so they don’t make the lettuce soggy. The one thing that truly makes a layered salad is the peas. They really do add a nice flavor and color, so don’t leave them out, OK.
Seven Layer Salad
Salad:
3 cups chopped iceberg lettuce
3 cups chopped romaine lettuce
1 cup sliced celery
3-4 green onions, sliced
Salt and pepper
1 1/2 cups mozzarella cheese (or cheddar if you prefer)
4 boiled eggs, chopped
1/2 pound bacon, cooked and crumbled
2 cups frozen peas
Dressing:
3/4 cup sour cream
3/4cup Miracle Whip (or 3/4 cup mayonnaise plus 2 tsp sugar)
1-2 tsp seasoning salt
Layer all the salad ingredients in a glass bowl in the order listed. (If desired, reserve some of the bacon, egg, and diced onion for garnish.) Combine the sour cream, Miracle Whip, and seasoning salt in a small bowl. Spread evenly over the layer of peas, making sure you seal the salad all the way to the edges of the bowl. Cover with plastic wrap and chill for up to 8 hours. I like to add garnishes at the end because it looks pretty, but you don’t have to.
