Lime Sweet Rolls – soft and fluffy rolls with sweet citrus filling, topped with a tangy lime glaze. A refreshing sweet roll recipe!
When spring rolls around, it always puts me in the mood to bake with lemons and limes. I guess their fresh flavor just makes me think of summer and sunshine. And after 5 months of winter, anything that resembles summer and sunshine is sure to cheer me up!
I love orange rolls, and thought I’d experiment with lime sweet rolls to see if they would be as good. Oh boy. Were they ever! My boys aren’t very fond of orange rolls, but they loved these. I made them for conference Sunday, and I think we may have to start a new tradition. They are amazing!
How to Make Lime Sweet Rolls
Ingredients needed:
- instant yeast (I use SAF yeast.)
- granulated sugar
- warm water
- milk (I use 2%, but whole or skim will also work.)
- eggs
- oil (vegetable, canola, or any oil that is liquid at room temperature)
- salt (Adds flavor, but also regulates the yeast, preventing over- raising.)
- vanilla extract (adds a great flavor to the yeast dough)
- all purpose flour (I like unbleached flour, but that’s just a matter of preference.)
- butter (I use salted butter in all my baking.)
- freshly grated lime zest
- fresh lime juice
Mix yeast, sugar, and water. Let sit for five minutes. Add milk, eggs, sugar, oil, salt, and vanilla. Add flour a cup at a time. Add enough to get a soft dough. Knead till smooth. Place dough in a greased bowl and let rest for about 20 minutes.
Roll out on an oiled counter to a rectangle about 13×28″. Spread melted butter evenly over the top of the dough. Combine sugar and lime zest and sprinkle over the butter. Roll dough up and seal the edge by pinching. Cut into slices 1″ to 1 1/2″ thick.
Place on greased cookie sheet with sides. Cover with waxed paper and let rise till doubled, about 45-60 minutes. Bake at 350° for about 30 minutes or till lightly browned.
Combine icing ingredients, adding enough lime juice to make a thin icing. Spread over warm rolls.

Lime Sweet Rolls with Lime Glaze
Lime Sweet Rolls
Soft sweet rolls with sugared lime filling, and topped with a creamy lime glaze.
Ingredients

- 1 1/2 Tbsp. instant yeast
- 2 Tbsp sugar
- 1/2 cup warm water
- 1 1/2 cups warm milk
- 2 eggs

- 1 1/2 cup powdered sugar
- 2 Tbsp lime juice

I made these tonight. They are very good! It also only took about 20min in the oven. I would suggest starting with 6 cups flour and adding from there. Iāll also add a cream cheese lime filling next time to add some depth. The dough was very easy to work with.

Hello! it’s me again..today i made your lime rolls but switched it up to make pizza rolls…i followed the directions but for the filling, i mixed 1/4 cup melted butter and spread on rolled out dough. I then sprinkled Italian seasoning, parmesian(canned), minced garlic(jar) and sun dried tomotoes(not in oil) on top of the butter…they are delicious! i had one for lunch with a small side of tomato sauce to dunk it in…when the rolls were done(20 minutes with my older oven) i put a small amount of mozzarella cheese on top and put back in over for several minutes to melt. It would have been yummy without the added cheese on top but i had a small chunk left in fridge so i thought-what the heck! lol I adore this recipe…thanks again!

I’ve made these rolls so many times..I just found creations by Kara several weeks ago! This dough is so easy to work with..the only difference is my oven is old so it only took 20 minutes to bake…her French bread recipe is so easy peasy to make as well!! Very yummy!
