One thing I have really slacked at in the mom department is having fresh veggies readily available for my kids (and myself) to snack on. I am even one of the lucky ones who has kids that actually enjoy veggies. I’ve just been so busy with so many things that we have eaten pretty poorly the last few months. (That probably explains all the sickness going around.)
I know that if I have veggies ready in the fridge, they get eaten. Especially if they have dip with them. My kids will eat a bucket load of vegetables if I serve them with a yummy vegetable dip!
I found this recipe in one of my cookbooks and decided to give it a try for New Year’s Eve. I’ve never tried greek yogurt before, so I have it a whirl in place of the sour cream. I think it turned out fantastic!
Easy Vegetable Dip with Dill
1 cup plain Greek yogurt (or sour cream)
1/2 cup mayonaisse
1 Tbsp dry minced onion
1 Tbsp dry parsley flakes
1 Tbsp dry dill weed
1/2-1 tsp garlic salt
1 tsp Accent (I know MSG gives lots of people the heebie geebies, so feel free to leave it out, just up the other seasonings.)
Combine all ingredients in a small bowl. Cover and chill for at least 30 minutes to allow flavors to blend. Serve with fresh veggies.
