The Adoption Boutique that I held at my house this weekend was not as successful as I had hoped. I handed out 300 invitations, and had 11 people show up.
Christmas Gumdrop Cookies
We deliver homemade goodies to our neighbors, and I like to get an early start, so I will be doing a lot of baking this week. I love trying new recipes, and I’ve got at least a dozen bookmarked. I tried these gumdrop cookies several weeks ago, and we loved them.
How to make gumdrop cookies:
- You start off by beating egg whites till soft peaks form, then beat in 1/4 cup of sugar. Set the mixture aside. You won’t use the yolks for these cookies, so you can use them for another recipe.
- In a large mixing bowl, cream butter and another 3/4 cup of sugar. Beat in the extract of your choice. Then stir in the dry ingredients and chopped gumdrops.
- Drop dough by spoonfuls onto silpat or parchment lined cookie sheets and bake at 350° for about 10 minutes.
Tip for cutting gumdrops:
To make cutting the gumdrops a little easier, dip your knife in hot water often. Or cut them with kitchen shears and dip those in hot water.
Handy supplies for making gumdrop cookies:
Silpat liners – the gumdrops tend to stick to the cookie sheet, so silicone liners are so handy! You can also use parchment paper if you prefer.
Kitchen shears – I like cutting my gumdrops with kitchen shears, I think it’s easier.
Hand mixer – Makes whipping up those egg whites a breeze. I have this one and it’s a powerhorse.

Gumdrop Cookies
Chewy cookies filled with chopped up gumdrops. A fun Christmas cookie recipe!
Ingredients
- 2 egg whites
- 1/4 cup sugar
- 3/4 cup butter
- 3/4 cup sugar
- 1 tsp vanilla or almond extract (I love using almond)
- 1 3/4 cups flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped fruit gumdrops
Instructions
- Beat egg whites till soft peaks form. Gradually add 1/4 cup sugar and beat till stiff peaks form. Set aside.
- In large bowl, cream butter and 3/4 cup sugar. Beat in vanilla. Stir in dry ingredients and gumdrops. (Mixture will be very dry.) Gently stir in the beaten egg whites.
- Drop dough by spoonfuls onto silpat or parchment lined cookie sheets. Bake at 350° for about 10 minutes. Cool for 2 minutes before removing to cooling racks.
