I got this recipe from a friend a few years ago, and it has become a family favorite. She called it nutty chicken cubes, but I always use cashews, so at our house it is Cashew Chicken. It is really fast to make, so start your rice cooking early. (I say that because tonight I forgot and we were sitting around with our mouths drooling waiting for the rice to cook.)
This is a perfect recipe for hectic weeknights when you are running kids to and fro and don’t have much time. Hope your family enjoys it!
Easy Cashew Chicken (aka Nutty Chicken Cubes)
1 Tbsp oil
4 stalks celery, sliced
4 stalks celery, sliced
1 small onion, chopped
2 boneless skinless chicken breasts, cut in chunks or strips
6 Tbsp soy sauce
3 Tbsp sugar
1/2 cup water
1/2 cup cashews (or other nuts of your choice)
Hot cooked rice

Cook cubed chicken in a skillet with the oil till golden brown and cooked through. Set aside. Add celery and onion to the pan and cook for 3-4 minutes, or till crisp tender. Add chicken back into the pan. Mix soy sauce, sugar, and water and add to pan. Cook for about 2-3 minutes. Serve with rice, and top with cashews.
